Memorial Day weekend has come and gone yet it always marks the start of summer for my family. We typically spend the long weekend at our family lake house, boating, enjoying the sunshine, and spending quality time with each other. We love to try out new cocktails and recipes – sometimes they are fantastic sometimes there is no need to make them again (oh, well). With a bunch of boys now in the mix (husbands and a fiance) there are requests for heavier food or just more of it in general. While that is the exact opposite for the women in the house, we all agreed on one particular appetizer over the weekend. It is so easy whip up, doesn’t require a hot oven, and perfect for a hot summer day.
Salmon Cucumber Bites
Ingredients – um, so simple!
Smoked salmon
Chive and onion cream cheese or Boursin Cheese
1 tbsp. of capers
1 English cucumber
toothpicks
S&P
Directions
Slice washed cucumber approx 1/4″ thick rounds
Lay out slices on a platter and pat dry with paper towel
Spread herb cheese onto the rounds
Place two capers onto a toothpick followed by a slice of lox and then through the cheese and cucumber.
Sprinkle with sea salt and cracked black pepper and serve.
Remember these are bites, don’t overwhelm the slices!
