Collecting glassware can be a little problematic as it can start to take over your valuable cupboard space but making a fun and easy cocktail is a great excuse to pull them out. This thyme and berry bubbles cocktail recipe includes a simple syrup that is exactly that, simple to make but it’s incredibly flavorful and lasts for up to a week so you can make it ahead of time if needed. This is a great cocktail to make in lieu of a mimosa for a shower or simply a fun gathering of friends. Though, if you are like me and enjoy bubbles but know you don’t need a full bottle I recommend one of these champagne stoppers that work great and allow you to open one without letting excess go to waste.
Thyme and Berry Bubbles
Ingredients For Blackberry and Raspberry Syrup
{make ahead as the syrup will last for one week refrigerated}
1/3 cup of mixed blackberries & raspberries, plus extra for garnish
1/3 cup of water
1/3 cup of sugar
Ingredients For The Cocktail
1 bottle of chilled prosecco or champagne of choice
1 ounces of chilled gin per glass
Ingredients for the Garnish
1 sprig of thyme per cocktail

Directions to make the syrup
In a small saucepan, bring water, sugar, and berries to a boil. Reduce heat and simmer for 10 minutes, until the berries are softened. Remove from heat, drain the berries, and allow them to cool.
Directions To Make The Cocktail
Pour 1 ounce of gin into glass, add 2 ounces of your simple syrup, top up the glass with prosecco or champagne. Garnish with a thyme sprig and a few berries.
