With all the holiday parties and the bring something to share requests, recipes that I can make ahead of time are always ideal – especially when I’m the one hosting. These tiny morsels of goodness are so easy to whip up and are sure to be a crowd-pleaser; with so many options you can always make them to compliment what you will also be serving. I also love these for a snack when I know I’ll be on the road all day or to add to a salad for a bit of crunch.
I’ve created three flavors, and I like them all equally; though, if I had to choose, I love the sweet pumpkin spiced flavored ones – the perfect fall treat.
Garbanzo Beans Three Ways
Ingredients
Pumpkin Spiced Garbanzo Beans
1 can of cooked garbanzo beans
1 tbsp of agave or honey
2 tsp of granulated sugar
1 tsp of cinnamon
1 tsp of pumpkin pie spice
Garlic Parmesan Garbanzo Beans
1 can of cooked garbanzo beans
2-3 cloves of garlic minced
1.5 tbsp of good olive oil
2 tbsp of parmesan grated
1/2 tsp of dried or fresh oregano
s&p to taste
Spicy Garbanzo Beans
1 can of cooked garbanzo beans
1 tsp of chili powder
1/2 tsp of cayenne pepper
1/2 tsp of sea salt
1 tsp of ground cumin
1. 5 tbsp of good olive oil
Directions
Preheat the oven to 400 deg. Prepare a rimmed cookie sheet with foil or parchment paper. Drain and rinse the beans well, removing any skins that have flaked off. Lay flat and dry with a paper towel or a clean kitchen towel, I let them dry for about 30 min.
Pumpkin Spice Garbanzo Beans – Place beans on prepared cookie sheet in one even layer. While the beans are cooking mix ingredients together in a bowl. See below for the final step.
Garlic Parmesan Garbanzo Beans – In a medium sized bowl, mix the oil, garlic and oregano together in a bowl. Add the parmesan and then season with salt and pepper to taste. Add the chickpeas and stir until well combined. See below for the final step.
Spicy Garbanzo Beans – In a medium sized bowl, mix the all dry the ingredients together, once mixed, add the olive oil. Once mixed thoroughly add the garbanzo beans and coat well. See below for the final step.
All flavors – Place on center rack and cook for 40-60 minutes. Check after 40min, if beans appear to still hold moisture, continue to let them cook but check frequently to ensure that they don’t burn.
Pumpkin Spice Garbanzo Beans (continued) – Add cooked beans to the prepared bowl of ingredients, stir until it’s well coated. Return to oven for an additional 5 minutes to caramelize.
Store in an air-tight jar and keep for 2-3 days.
